No idea what they were doing. They asked for Schedule A in Nov 2017 and then asked for few documents multiple times in 2021. It has been a very long journey for us so far.
This is so crazy man. I think maybe you could file for Mandamus to compel to officer to finish processing your case?

I think mandamus is not required now. As they have asked for re-medicals, I believe that the security screening process should be finished by now and the outcome is positive.

I expect to receive PPR in a month, if there is still more delay, then I'll think about Mandamus option.

Okay, finally sharing my medical/remedical timeline. Little Christmas Eve gift from IRCC came my way with a ghost update today.

AOR - Sep 26 2019 (COR: USA, FSW-O)
First medical expired: Nov 2020
First medical extended: Feb 2021
Extended medical expired: Oct 2021
Remedical request: December 2nd 2021
Remedical exam date: December 17th 2021
Remedcal passed: December 24th 2021

PPR: HOPEFULLY sometime before Dec 24th 2022 LOL
 
Final update on timeline:
Nov 4/21 - Re-medical Request
Nov. 17/21 - Re-medical Completed
Dec. 1/21 - "Medicals Received" ECAS message update.
Dec. 8/21 - Passport Request received
Dec. 30/21 - Passport Returned - Visa and COPR received

Honestly I did not get any mail notifications , I just logged in randomly into the account and saw the medicals (date) were updated .
I guess you are very lucky! Congratulations! Some applicants are asked to retake medical exam, which is expensive in some countries
