1 - You can stay in Canada for another 90 days from the day your OCWP expires as then you will be on implied status(90 days) until you receive your PGWP or decision on PGWP.
2 - Technically, you immediately have to stop working as soon as your OCWP expires. You can work until you receive decision on PGWP application but later in case if you PGWP application is rejected then it will be considered breach of your Visa condition (not being pessimistic, but just FYI). If you choice to keep working, and your PGWP application is approved then all that time when you didn't have any status(from your current visa expiry date till the date you receive your PGWP) will be considered legitimate (in other word it will be considered that you were authorized to work in Canada). Make a wise choice.
3- You can check processing time for PGWP from below link: http://www.cic.gc.ca/english/information/times/temp.asp

P.S. I just provide you with information I am aware of. Please contact a lawyer to seek better knowledge on your situation, as in the end you will be help responsible for your choice. :)
