recommended income for spousal sponsorship?

Ive been working for the last two years but quit my job in June to go to Vietnam and marry my wife. Now I'm back in Canada just beginning my first year at university.

I know an income is not required to sponsor your spouse but I've heard vietnam is one of the more difficult countries to sponsor from

Should I delay sending my application until I have a job or would it be fine to send it right now?

My parents did write a letter saying they will financially support us, I have about $8000 saved for supporting me and my wife when she comes to Canada.

Is this enough to sponsor her?

Vietnam is difficult to sponsor only because there's lots of marriage fraud in that country.

Your status as a student isnt a problem, and the support letter from parents will be fine. Most important thing is that you guys address any red flags you have, such as large age difference, quick marriage, etc
