In part B, number 5 of form IMM5533e it asks for employment or a source of income. We are both living outside of Canda. I the section for this, it says...

"If you are not working in Canada, provide other documentation showing that you can support the person(s) you are sponsoring. This must include a detailed explaination of how you plan to support yourself and the sponsored person(s) on a separate piece of paper."

I have written a letter explaining that once we get the okay for her PR card, that we will move to Canada and we will both be working. I don't know what "other documentation" I can show.

What is it that they are wanting us to provide?

How about tax or payroll documents that demonstrate that you are currently capable of providing an income and are gainfully employed. You should also be able to demonstrate your employability in Canada.
 
I am living in Russia with my wife. In Russia, they don't give you any documentation like this. I just get paid cash (not under the table, its legitimate).

I have my work contract that I can show, but do they really care about seeing that I have a job in Russia? I figure they are more interested in how I plan to survive once in Canada.

That doesn't sound detailed. How much savings do you have? What work are you planning to do? What are your qualifications that will allow you to get that work? How much do you expect to earn from that? Same questions for your wife. Are you staying with someone for free while you get on your feet or are you immediately renting or are you purchasing a home?

As zardoz said, showing that you are working in Russia shows IRCC that you are capable of being employed. If it's the same type of work that you will be seeking in Canada, it shows that you will likely be successful in obtaining that job in Canada.

I did this for myself as well. I showed that working for 30 hours per week, how much we would earn per month before taxes, and how much we would spend per month on housing.

I also stated in the letter that we would be coming with enough savings to last 3 months minimum for rent and food costs.

But my point being that aside from the letter, I don't know what else I can do as "proof"

I wouldn't bother getting a letter from your former boss. Your letter and proof of employment in Russia should be sufficient.
 
3 months of savings is not a lot. Do you have family that can help you if you are not able to find jobs by that time?

Yes, I have lots of family in Canada as well. I can try to get letters from them saying that we can live with them if things don't go as planned.

And the three months is a minimum of what we will save. Hopefully we will be able to get closer to 6 months.
 
More savings would be helpful since securing a good job in 3 months especially if you have never lived in Canada. You may also fun into trouble renting an apartment without more savings and without a job.

With our application, I stated that 3 months is minimum and that we are aiming for 6 months. As for "never working in Canada" I am a citizen, and have been told by friends that they will hire me if they have a position open. So for me, it should be quite quick and easy to get a job. For my wife, she might take a bit longer, but with at least one of us working, our savings will be able to last much longer.
