Don't know how to print text messages from android phone, you should use a third party file backup app to transfer sms to computer first, because the computer won't detect sms just via the usb connecting. Try Coolmuster Android Assistant

I like the idea some have suggested of screen capture from your phone then add a few screen captures to a word doc.

Also, I would only show a few per week. Organize by year, month then week...show a few screen grabs of the text for that week.

I did mine with online program, it saves all the imessages into txt or pdf...I don't remember the name, but it was fairly easy to find. So I got 950 pages of texts.
