Your PR is valid basically forever, unless you renounce it, become a citizen, somehow end up with a removal order against you, or no longer meet the residency requirements and have your PR status revoked. You have to physically reside in Canada for 730 days total out of a 5 year period (doesnt have to be continuous; it's 2 years worth out of 5 years). Your PR card expires, but your actual status doesn't.

So I can leave Canada the next day but still come back and stay for two discontinuous years within five years

You'll need to wait until you get your PR card, I don't think they will mail them abroad for you but I could be wrong.
