I have been living and working in Canada for 8+ years and my last 2 WP's were for 3 years each.
So, say if I were to receive another WP valid for 3 years and during that 3 year period i applied for PR and got refused based on my spouse being medically inadmissible.
Would I still be able to remain in Canada on that WP? Or would the denied PR mean I have to leave Canada immediately?

i am very sorry to read this from you...it breaks my heart to know about your situation...
for me, you have a legal status in canada for as long as your work permit is valid...if you don't mind, in what category did you apply for pr?how serious is your husband's medical status?
 
I would add something else too. If being medically inadmissible is because of "excessive burden on canadian health care system", you might be able to qualify for that by submitting another application along with "PROOF of enough funds to support your spouse's medical treatment".

It will be an uphill battle and might require lawyer assistance, but i have heard of cases in which people who were refused PR, the appealed with the help o a lawyer, and setup a fund to cover health care costs and were finally approved.

Being denied PR has nothing to do with Work permit validity. You can stay and work until your work permit is valid. However, you should that in general you cannot work in canada on work permit for beyond a total of four years. There are exceptions though and you seem likely to be one of them.

Still another approval of work permit specially when it totals your period over 8 years is less likely
