Am I (the sponsor) allowed to write up my spouses(to be sponsored) forms?

You can do it, but make sure your spouse knows what you wrote, understands what you wrote, and agrees with what you wrote. If possible, give your spouse a chance to edit or make changes to what you wrote before sending in the forms.

I've seen a lot of appeal case where the applicant had a different story in the interview than what was written on the forms and wasn't aware of what was on the forms he/she signed. You don't want to get into such a situation, so be careful. If your spouse doesn't read well in English or French (which ever you used) make sure that he or she has an accurate translation of what's on there.
 
I wrote up all the forms (absolutely everything). My wife didn't have the time when we applied to work on it. She literally just signed it before I mailed it all, although I did make sure she understood what the sponsorship agreement meant. I was the applicant. Of course, we knew and trusted each other, and if there had been an interview, she would have read it all over.
