I still have my police certificate from when I applied for my working holiday visa(its nearly two years old). Will I have to request an up to date one from Ireland ?

Yes. They must be less than 6 months old.

If you have not returned to Ireland since you obtained your last police certificate, then you don't need a new one.

For countries where you have lived for six months or more, the police certificate must be issued after the last time you lived in that country.
 
I can tell you that they will demand a new PCC. My wife's (when we applied) was 6 months old, and they demanded a new one.

EDIT: I should have also mentioned the waves and waves of people getting PCC requests during the Spousal Inventory Reduction program. Almost all had already submitted PCC's. Many were expired.

OP: I would request a new one.
