You need to include ALL employment/self-employment/unemployment periods from now back to 3 taxation years.
Everything between 01/01/2018 to present.
Yes, I can use the exact amount from the T4 right for that taxation year?
Also it have a column which ask for family size, do I put 2 there like myself and my wife or should I include my parents as well and put 4?
IRCC is only looking for income reported to CRA. Therefore, if that income is reported to CRA, then you can add that. If not, it may not get considered.
Also, best is to provide your SIN and authorization to IRCC to access your taxation details. As many have investment capital gains and other sources of income ranging from $$ to $$$, it is best to provide them access.
Use T4 to fill that value. I did the same in 2019. On GCMS Notes they updated the final value from CRA.

I sent my application to CPC- Ottawa, but I now realized that I haven’t included visa pages of my parents passport, I’m very much stressed now. Will they return my application or is there a way I can still provide them stamp copies? I’m very much worried right now.

you don’t need to stress, I did not include mine either during my in-laws sponsorship application in application kit. during the second part of the application when it was approved as sponsor and went for processing at nearest IRCC office , in my case was UK London , they ask me to send/ upload entire passport pages copies on my CIC account.
I am sponsoring my Father and Mother. Do i need to make one of them as Principal Applicant and other as Dependent or both can be Principal Applicants. I need to understand if I need to fill in 2 copies of Form IMM1344e - Application to Sponsor, Sponsorship Agreement and Undertaking with both Mother and Father as principal applicants or just need to fill in 1 form with one of them as Principal applicant and other as dependent ?

My parents have pretty much done just one job since like forever so I added the following topics on their resume:
Header:
Name/Profession
Email ID/Cell Phone/Website (if applicable)
Body:
Profile
Career Objective
Education
Work Experience
Hobbies/Interests
Footer:
Name
Address
Age/Date of Birth
Citizenship
Good question and I understand your confusion.
You only need one principal applicant. The other parent will be the dependent of your principal applicant. You only need to fill in one IMM1344 form as the principal applicant and mention other parent as the dependent.
Please note that there are other forms I think like IMM5669 and IMM5406 about Personal History and Additional Family information that you need to fill two copies both as principal applicant as well as other parent who is dependent. Hope this answers your question!
