Hi, if you are a Canadian citizen, her time outside Canada spent with you will count as if it was time spent in Canada.

Yes, you should hang onto something. Mail to you both sent at the same address. Better if it's official like tax or something. Utility bills work too. And your visa to show you were allowed to live there.
