My passport expires in March 2027. I’m considering renewing it in India before I travel, but the passport number will change.
Would renewing my passport before landing cause any issues with my COPR, landing in Canada, or getting my PR card?

Start with the question underneath yours, because it may remove the problem entirely.
Your COPR has a validity date, and that date is set by whichever expires first: your passport or your medical results. With a passport running to March 2027, your COPR cannot be valid beyond that and is probably valid for considerably less. If you are travelling soon, you will land well inside it.
So consider not renewing before you go. Land on your current passport, then renew in India or through the Indian consulate in Canada afterwards. Once you have landed, you are a permanent resident, and your PR card is issued against your landing rather than against a passport number. That avoids the whole issue.
If you do renew first, here is what actually happens.
The COPR itself does not become invalid. It is a separate document, and your permanent residence approval does not sit in the passport. But your PR visa counterfoil is physically in the old passport, and that is what creates the complication.
Guidance on this has been genuinely inconsistent, which is worth knowing before you act.
The IRCC call centre has told people to travel carrying both passports, the old one containing the COPR and PR visa, and the new one. Several people on this forum have reported doing exactly that and landing without difficulty.
But the Canadian High Commission in India has previously given different instructions, directing applicants to send both the old and new passports together with the original COPR through VFS, and to pay a document replacement fee of thirty dollars. That was some years ago, and practice may have changed, so I would not rely on it without checking, but it is worth knowing that the office handling your file has taken a different line from the call centre.
Given you are in India, that difference matters more to you than it would to someone elsewhere.
What I would do. Confirm your COPR validity date first. If it comfortably covers your travel, the simplest answer is to go now and renew later. If you genuinely need a new passport before travelling, contact VFS or the visa office directly and ask what they require now, rather than relying on the call centre, because it is their office that would process any transfer.
