So we should just type the name or actually put a digital signature? Quite confusing.

Like the form says, typing the name in the form is considered an electronic signature.
The only two forms you'll need to print and sign are the use of representative and the financial evaluation form giving IRCC access to your CRA tax information.

Doesn’t the financial evaluation form 5768 state electronically sign for point 8 under instructions for this form and Use of Representative as well to sign electronically which means typing the name is okay?

Oh, right. But the majority of the work should just be duplicated. Check everything carefully before submit. Like names, and dates gaps on CV etc.

You should provide more details.
From your message, you are saying 6, so you, wife, 2 kids and 2 parents up to 2022 = 6
2023 and 2024 would be 7.

You can’t. It was only open to people who were part of EOI2020. There is a very good chance that the pool may not be open for the next couple of years and there are likely many hundreds of thousands applicants waiting for the chance to try to secure PGP. The reality is that for many in Canada there will be no pathway to sponsor their parents especially within a certain timeline. People need to making arrangements for parents to live in their home country longterm while they hope for a chance to eventually apply but it could actually take decades to qualify given reduced quota and crisis in healthcare.
