Should I only list completed courses?
Or can I list an ongoing course with the conclusion date in the future?

I'm applying for visitor visa.

but I just noticed that the conclusion date is not mandatory

I think I will just leave it in blank

If you haven't finished your studies it is better to leave it blank.
 
I was trying to fill the education part
because I was planing to use the enrollment as a proof that
I'll be going back to my home country.

Filling the date serves little, what serves well is a letter of enrollment from your educational institution.

I think that leaving the conclusion date blank makes more sense.
