Maternity Leave and Reference Letter

Hi Guys,
I am Primary applicant in Express Entry and I am currently not working as I went to Maternity Leave from my Company A ,say for example starting from 1Feb 2018 and I never joined and neither resigned this company due to some personal circumstances..!
But I have completed my 3 years of experience in that company before going for maternity leave.I am claiming these 3 years experience in my Express Entry profile and I have shown my last month in Company as Jan 2018 as I was officially present there till 31 Jan (I have Bank statement for it, but not Salary slip)
I received pay for Feb 2018 (as my all extra holidays and leaves got encashed). I was not present officially in Feb(I have Bank Statement for Feb but not Salary Slip)
After 6 months in September I received Maternity Leave payment (I only have Bank Statement for that aswell!)

My Questions are:

1. Do I need to change in my Express Entry profile my last month in company as Feb? or Jan is good.
2. What duration of my work should I show in my Experience Letter Jan,Feb or August?
3. I am not in India and my company donot provide any reference or experience letter or any other document.How should I get my Roles and Responsibilites from my Employer. Affidavit can be made but do I need to be present in India to make affidavit or someone on my behalf can get it done (as due to Coivd I donot feel it safe to travel to India from other country with kid.
4. Can any current employee and my colleague present in different location then my last work location provide me with Reference Letter on plain paper or affidavit or I need someone from same working location?
5. Also for background verification what all information IRCC officers or someone they assign checks from companies?

Anyone having any idea about this please suggest!
