Hello Friend,
As far I understand London visa office doesn't accept any scanned copy of documents as per their website information. So you may have to send by The Royal mail(if you live in the UK) or by courier (if you live out side UK).

In terms of Application kit, As you want your spouse to be included with your application, You have to complete fresh
IMM008 form where you would mention that you are married and other form for your wife and her family (As I am concerned). Obviously you have to send your wife's passport, birth certificate etc (Notary copy)-- These may be meant APPLICATION KIT by the visa office.
Hope this will help, I would also encourage you to double check.

you should send the docs by mail - not email - as they are asking for original docs
as to your self you should update you application form, this would most likely require you to fill out all the forms again
