Now I still didn't reach Canada, and my wife wants to apply for multiple entry visit visa and her intention is to stay with me for the period of my study. She's required to provide itinerary, should she book a 2 way ticket or one way?

I think you should book one way. @ mead I think Itinerary is required in case of visit visa.

thats for visitors visa.....if u add it for spouse visa u will get a visa till the date of ur return ticket which is not what u want. u add ur spouses study permit or LOI which is also not mentioned here because this is a general form and there is no special spouse visa form.....

I didn't know that for Spouse visa can be applied differently. I thought one is applicable to apply if the application is submitted together with the main application.
u can apply for TRV for ur spouse and it can be done separately or together...i did my wife's visa after mine as i thought it was a bit safer.....not 100% sure its safer or not but i like to think it is...that way my home tie was my wife.

I didn't know that if you apply for spouse you don't need itinerary.

Can you also apply OWP for Spouse or anyone else who would like to accompany you after the main applicant get visa?

But she mentioned in the eligibility questionnaire she wants to stay more than 6 months. Yet, itinerary came up in the online checklist.....

So she should book 1 way only?

yes.if the box is there then she can book one way as she doesn't have any plans to return soon.

Would be better for her to apply when I reach Canada, get an apartment/address, then make her a letter of invitation to make the case stronger? Or I could say I'm willing to tak her in when I settle?
