Is there any time line before which I should accept the ITA?
I received ITA on 18th Dec.
But I am still waiting on some documents, so just wanted to wait till I collect them all.
Are there any issues in this?

It's 60 days. After this ur ITA expires. You can check number of days left when you login to my-cic.
