is it possible to create a new EE Profile and use the old invitation letter ?

Happened to me too, I just resubmitted my EE and waited for another invitation. I got another one in 2 weeks. They send them out periodically.
Assuming the change you want to make doesn't put you outside the group of people they want to nominate you should be alright.
