I heard you need to meet all the requirements at the time of ITA as well. and previous refusal is making me anxious.
Your eligibility is evaluated based on MEC(Google it), if you complete your two years before submitting a PR application against this ITA - you meet MEC.

You've repeatedly written this and all I'll say is to search the forum a bit. SO MANY cases like yours that got ITA before experience was completed and successfully got their PR. All I can suggest is go through the cases (try to avoid posting anxiety related comments) and see the evidence that nothing will go wrong unless you make a mistake in your docs like you did previously.
As soon as you complete your two years, get the employment docs in place. But for now, you need to go to BLS and start your PCC (if you need one) and gather every other doc (arrange/start organizing your PDFs). You can also do one final review of your docs with a Canadian lawyer for $150-300/hr and get peace with it before submitting.
For now, focus on completing the 2 years and making sure that all docs are good. BLS can be a pain for PCC, so start that part asap.
Do everything right and I can assure you, it will be "balle balle" at the end
