Thank you for this link. So when we get the work permit in the mail, we have to use it to apply online for a SIN? or does the temporary SIN number appear somewhere in the letter / work permit paper(s)?

No, the temporary SIN won’t be on the document. The IRCC issues the work permit, the ESDC aka Service Canada issues the SIN.
When you receive a SIN years ago you’d receive a card, now you’ll get a piece of paper that has the SIN on it .
Keep that in a safe place . Some employers want to see that if you’re showing a paper work permit .
Example , even though I’ve had a SIN for years, and I’ve misplaced my card, if I ever needed to get a confirmation of SIN. I’d trot down to a Service Canada office show all my ID and they’d print of a piece of paper called
“ Confirmation of SIN”

I see you’re in Ontario. Don’t know if you’re in Toronto . If you are avoid the one at Yonge Sheppard. I used to work in that building . It’s a gong show . There’s one at Gerrard Square, it was always fast & quiet
