Important question about EE profile submitting

Hello,
Currently, I and my wife are living in Quebec City. I am holding a closed work permit, but I left my job and I am planning to apply for Express Entry and move to another province.
I had a negative experience with an immigration lawyer, I got a refusal of my PR application because there was not enough evidence of my work experience as a freelancer.
This time I decided to take charge of my application and do everything by myself.

I will be grateful if you can help me with some of my concerns.

1) Can I answer no for spouse's work experience in Canada even if she has some as a cashier in the store?
I do not want to get any additional points for that, because she worked without any contract.
same for my freelance work, I will not include it in EE application again.

2) Taking into account my history with the lawyer, there is a question
Has .... ...... applied for Express Entry before?
Should I pick yes even if my previous profile was made by representative?

3) Can we live in Quebec for the duration of all process and leave after receiving of PR status? Or if we stay in Quebec after ITA it might put us in danger of refusing from an officer?
