Immigration as non common law relationship

Hi all, I recently got a job at UoT, so my and my partner are looking to move to Toronto. The job starts on September 1st, but we won't be considered common law until July 10th. Considering the work permit processing time, we had a few interrogations.

- Should I wait until July 10th to send my application at the risk of not having the work permit approved by Setp 1st?

OR

- Should I apply for a work permit for myself, while my partner applies for a visitor visa that we'd transfer to a work permit once she finds a job. If so, how do I declare the relationship to the IRCC? or can I update my file once the relationship becomes common-law.
(There is no marital status options for my case on the application forms but apparently choosing single means "you have never been married and are not in a common-law relationship". That sounds a little bit dodgy)

I don't want to mistakenly misrepresent the situation to IRCC so any input would be greatly appreciated.
