Update the embassy with your new work information after you have been approved to sponsor and the file goes to the visa office.

No, there is no effect. As a spousal sponsor you are not expected to meet a minimum income level. Providing the information to the visa office means that you keep them informed of your ability to fulfill your responsibilities as a sponsor and there should be no issues with this.

If you don't tell them, they might ask later if there are any concerns about your spouse's ability to become self-supporting. Then again, they might not. It's just a good idea to keep them updated of changes which can affect the processing, but it makes no sense to send it to CPC-M after the original application because they are not going to match it up.

Spouses and dependent children are exempt from the financial requirements, that is why there is no need for a minimum income level to sponsor them. Other family members are not exempt.
