I was in Canada for five months last year and my tourist visa is good until 2018. I have a stamp of entry in my passport, but there's no leave stamp. When I went to England and France in years past they stamped my passport every time.

Also, on my entry stamp the immigration officer put down 30Feb2016 as my date to leave (there was no Feb 30 this year). Is this common? Would they question about my lack of leave stamp?(I'm going back in two months). How can I prove my date of departure?

Yes this is common. When my aunt left Canada in January, she said her passport doesn't have a stamp either. I think it is because they scan your passport at the airport upon checking in. So they have a record of you leaving Canada. :)
