I updated my info through CIO-Sydney-Search-Enquiry@cic.gc.ca
I don't know if it is the same for everyone. Check your AOR the email address to contact is on it. You will have to scan your babies birth certificate too

No they did not tell me anything. There was an automated email that came as soon as I sent my update just to let me know that they received my email but that was about it.. It took a couple of weeks to update and I knew only because I changed my address at the same time so I was able to check on Ecas to know when the change was done
