As said, they can not just give you one 15 min. break. They have to give you a half hour break but it may be split up into two 15 min. breaks if you agree and it may be unpaid even if you don't agree. If you are supposed to work 8 hrs. a day, this would mean that instead of working 9 to 5 for example, you'd work 8:30 to 5 or 9 to 5:30. Your contract should say how many hours you are supposed to work. If your boss increases your working hours without paying you more, it sounds like you just took a pay cut. If you accept the pay cut, that's up to you. If you make a fuss, you are still in your probation time as you say and they could kick you out.
Have you tried discussing with your boss what is expected of you? Maybe they are planning to pay you for working more.
