My wife and I want to visit my wife's brother in Canada. I am an Imam in a mosque that our family owns and I teach Quran and religious courses. I also deliver religious sermons, which are posted on YouTube. I have good travel history (6-7countries) in last 10 years. I also have a valid Australian visa. My question is what do I put under work history as my main income is through religious work and I get paid in cash. and what documents do I show for the same?
 
You will need to proof your income through legal sources.
As a example,
pay slips
Business documents
Freelancer documents
Tax documents
etc
Is imam/presit income subject to Tax exemption in your country? If yes, you need to show tax documents.

In end of day, you need to show
Proof of LEGAL income
Proof of ties in home country

When needed, you can add explanation letters to explain your showed documents.
