I have received a full-time job offer to start in May 2nd and I will be graduating in mid April. However, the school takes a couple of weeks to issue graduation documents, therefore I find it unlikely to have all documents to apply for PGWP before my starting date, has someone been through this before? what happened?

Hypothetical timeline
-Graduation: April 19th
-Started working full time: May 2nd
-Graduation Documents received: May 9th
-PGWP application: May 10th

That's factually incorrect, you don't need the actual PGWP to start working, as long as you have submitted the application you're in implied status, the question is focused on whether you can work before submitting the application and asks people that have done so about their experience

You can start working full time as of the day you submit the PGWP application. So in your scenario above, the employer should be notified that the first day of work has to be postponed to May 10th.
