You can certainly do that. Make sure you bring additional funds to cover your expenses since you won't be able to start working until classes officially start in September. CBSA officers may ask you to demonstrate that you have the extra funds to support yourself without working illegally.

No.

I would have at least $3,000 extra if you're coming in May. The GIC account money is to pay for your expenses once you start school - not before. The officer may ask you to prove you have enough money to cover your expenses before school starts.

You're misunderstanding. You need to have money above and beyond the GIC money. That's what CBSA officers may ask you to prove and this is why I'm recommending that $1K extra isn't enough to cover you for 3.5 months.
