In the Form they ask for an last address in New Zealand!
CAN I write a hostel address or does it has to be a "real" address maybe from a friend?

and they ask for a
Canadian Visa Office Abroad/Overseas Processing Office: _______________
Should I leave it open or written VIENNA for Germany?

You should write Vienna for the VO.

As for the address, I would write exactly what they ask of you. The last address where you stayed in New Zealand. If that was a hostel, then give that address.

yes I think it would be okay to write the hostel so many people have this work and holiday visa and just don't have real home address there!
