Does everyone have to work in their field of study with your post graduate work permit? OR You can do any work as long as it is skilled work with a NOC code?
Generally the PGWP is an open work permit.

PGWP is an open work permit. You can work whatever you want (except sex work, ect...) It doesn't even have to be skilled work...

true but might help to work in a noc 0 , a or b skill level to gain expereince for a future PR application

Absolutely right! :) Also, working with children or in healthcare need an upfront medical exam otherwise the permit will be partly restricted

I have a express entry profile with 473 points. Recently I quit my job as Mechanical Technologist. I did three year program in Mechanical Technology.

I have a job offer to become assistant manager of a franchise motel. Can I accept this job and show it on my Express entry profile?

I believe it does not matter as long as it is NOC 0, A or B job.

You could show it, but you won't be able to claim CRS points for Canadian Work Experience before you reach one year all together with your different jobs. So, technically it doesn't make sense to show it in the EE profile as work history yet, unless it will make you reach one, two, or three years of Canadian Work Experience. You want to show the jobs you can claim CRS points for. All the other go into personal history part of your PR application when your points will be high enough to apply.
