It all depends upon visa officer. If you don't have an ITR then provide whatever documents you have. That's the best you can do.

Regarding the programs, it all depends on your career aspirations. You can apply for any programs in Canada based on your past education. If any institution finds your academic profile suitable then they will provide you with letter of acceptance. Your job of teaching as an assistant professor has less role to play in your higher studies.

So My Question is What is IME? and i dont have IME as i am applying for the first time in medical, do i need that for the medical

You just need to tell that you are going for upfront medical test and that you will submit the medical acknowledgement with visa application. You just need 2-3 passport size photograph, photocopy of passport front page and institution offer letter. Nothing else.

I believe your medical centre is assuming that you have applied for visa and now visa office is asking to go ahead with medicals. In such cases the embassy sends some IME form. So your medical centre may wish to see that document before proceeding.

Better go to such medical centre where they can upload medical report online. Such centre can conduct upfront medicals.
