Do I have to notarize invitation letter for parents? Or is it good enough to sign it and scan with my driving license to show it's authentic.

Notarized letter holds good and adds weight age to case. However you can submit the signed document and attach good funding proofs along with the home country ties to make case stronger for visitor visa.
