Declaration of Gold during landing

I have questions in regards to declaring gold when landing

I was told that I can declare gold and I will not be taxed until and unless I sell it
But for them to know that I havent sold it would I have to declare it in my taxes every year? or else how would it know?

what if I sell then how much would I be taxed?
