Hi
I am an international student currently studying in Canada. I am eligible to apply for PR according to the assessment tool.
I was wondering if I can add my current education (still undergoing) to my EE profile for additional CRS points.

Any help in the matter is highly appreciated.
 
No, you'd have to actually graduate first. You can't put an incomplete degree/diploma and get points for it.

I complete my program in 2 months, will I have to wait for my degree certificate to add those points or can I do it once I get my course completion certificate?

While filling the education history part of the EE profile I included a certificate obtained from a postgraduate program that is referred to in France as a Maitrise (typically a Masters 1 or first year masters certificate). I described it as a masters in my EE profile but I also indicated that the WES evaluation I have, shows that it is equivalent to a 4 year bachelor degree programme; with the understanding that my points for educational history will be calculated based on the WES evaluation not on my own presentation of my educational history.
Shall I describe as Bachelors or Masters ?
Knowing that I chose Bachelors in the 2nd question for WES ECA.

If you have finished your course, and you have a document that verifies this (final transcripts, etc), you can add it. For example, will this course completion certificate be counted by an employer if you used it to get a job? If yes, then it will work.

Your college will state that you completed your degree on X date. Any date after that will work. Check with your college to understand what they consider as your date of completion.
 
I checked with my college, the day of completion will be set as the they day they issue the course completion certificate.
So, say if I receive an ITA, the course completion certificate will be accepted as my proof of graduation while uploading supporting documents?
