My brother has first degree in Medical Laboratory science since 2013. He works as head of Laboratory department in a hospital in Ghana.

Now he has got and acceptance letter from a university in Canada to study MSC Laboratory science.

I want to ask if my father can be his sponsor considering that he is 32yrs now?

If he is 32 then he should be showing his own funds. He can try with his father being a sponsor and it may be looked at negatively as he can’t support his own studies and living expenses. If doing MSC doesn’t he have any university funding (TA, research work)?

No. He does not have any funding such as TA, research funding etc but he doesn't not have enough fund in his name (personal bank account). But my dad is more than capable to sponsor his studies just that he is not sure if that may work out considering his age now
