Color or B/W copies

For some of the documents we can scan and print a color copy. Please suggest, which one is better, a simple xerox copy of the document or a color copy?

I always submitted B&W copies, my notary did copies in B&W (eg. birth certificate, national ID etc). Save your money & environment
