Hi,

Canadian PR holders are exempted from taking a Transit Visa in any of the Schengen countries. However, would the same apply if we were to collect baggage and change airline in Italy before our route to Montreal ?

Italy has a dry transit policy, i.e. most transit passengers are not required to go through custom.
Your baggage should be checked until Montreal... If in doubt, ask the airline.

As per the previous answer if you are travelling on a single ticket all the way through to Montreal regardless of whether more than one airline it is usual for bags to be checked end to end so you would not even see your bags at the Italy connection.

There are of course exceptions so you will need to check with your airline, the airline issuing your ticket from your origin country either before travel or when you checkin. If you have separate tickets one to Italy and one from Italy to Montreal then of course you would clear customs in Italy and have to checkin again for the Canada flight.

Other than that when there is an in country connection, for example if you were flying to Toronto via Montreal you would collect bags at Montreal clear customs and drop bags off for the connection to Toronto.
