Change spouse status in Canada from student permit to open work permit

I am planning on saving international college fee by changing status of my GF from student to worker but have some doubts about it. Suppose I get married today and send sponsorship application to CIC to grant work permit. Can my gf(then wife) skip school for the time being the application is processed. She already has summer break until aug end but she need to start school by sept. Will she be able to receive her work permit by then?
