This is a really stupid question but having lived in Europe, you'd be surprised how many businesses do not accept online payment after business hours...

Can we pay for ITA fees over the weekend?

Go ahead and pay it. you will get your receipt and confirmation of payment. you can pay any day of the year and anytime of the day
