can we include some text/explanation in documents while uploading?

Hi.

i was just wondering if it is fine to include a little text (one liner) in some of the documents. For example, for proof of fund , i will be giving proofs from 5 banks. So i want to give headers to each proof.

Is it fine or not allowed?

You can attach a letter of explanation before the documents. Don't modify the documents you have received from any official institutions. Instead, write an LOE, and make that the first page of the set of documents - you can use a PDF creator to create a multi-page PDF, with the first page being your LOE and the other pages being whatever documents they are.

I did this for my POF and a few other sections as well.

Yes, they are approved. Sorry, can't share any docs, but I think you can follow @Prats6 advice and make one LOE with sections. Both are viable options.
