Can I renew my pr card after it expires?

How long before the pr card expires should we apply for renewal ? Can I apply for renewal when it expires or do I have to do it before it expires ? And do I have to stay in Canada for the renewal process ??

You can apply up to 6 months before it expires and any time after it expires. You don't have to stay in Canada but getting back after it expires might prove to be "interesting".

Just to add that a renewal can only be applied for from within Canada and IRCC will only mail to a Canadian address or request you to pick up in person.
