I am wondering can i alter and new work experience if i recieve pnp that is not mentioned in my ee profile info?

I think you can alter your profile before next round of ita issuance happens. But why would you attempt to do that as you'd already have 1000+ points. But big no for altering anything you already gave for getting pnp. I saw someone getting rejected for providing different reference letters to province and IRCC. In my opinion, best is not to tamper anything unless you see any mistake.

I dont have 1000 points,well i am asking this because ontario ask about a lot of work supporting documents which will be difficult to provide from previous work but i can provide from my current work,the only thing is that i only included my previous work in my ee as i am trying to avoid letting my current work know about my immigration plans
 
I checked the OINP human capital stream employment document check list. I don't find anything special apart from what IRCC expects for employment.. a letter on letter head listing designation and responsibilities. I am not sure what extensive documentation that you are worried about. They ask for pay slips, employment contract etc. only if salary, hours etc have not been mentioned in your reference letter. If your reference letter has everything, then you should be good.
