Is it ok to send it via Canada express post or is Fedex better?
 
I would say either is fine but I prefer FedEx although they are more expensive. I think FedEx is more reliable - just my experience
 
As long as the Canada Post option gives you a tracking number where you can follow your application to make sure it was delivered and also signed for.
 
Canada Post lost my package and took them 1 week to find it. Not sure about FedEx, but some say they are more reliable.
However, I don't want to be harsh on Canada Post as I send tens of packages and this was the only time that was delayed

In all cases make sure you have a tracking number.
 
Use a private courier service for peace of mind.

Personally I used UPS and sent it 4:00 p.m. and it was delivered in CPC-M 10:00 a.m. the next day.

Used Canada post but with signature option from whoever receives it :D :D and yes tracking. They haven't let me down.

Best:
GTA based couriers which know how to handle PGP. To name a few that did well in 2015 & 2016: Happyroad, VW, Deal Made Express, Metro Mississauga, Messenger Int'l etc.

Average:
Big couriers like Fedex, UPS, Purolator etc.

Worst:
CanadaPost
