Basically, as the question asked. Anyone who applied for PGP and got the letter for sponsorhip approval was asked to verify income or residency in Canada later in the process? Trying to understand if they are casually asking for this at a later stage close to approval of Permanent residence. The reason to ask is if I am temporarily living outside Canada, after the sponsorhip is approved, can it become and issue for PGP application for my parents? Anyone?

Yes you can ask to prove you continue to meet income and residency requirement. a
Living abroad for an extended period of time should disqualify you from PGP. The main goal of the program is family reunification of parents and grandparents with their child who lives in Canada.

They probably already know you’re not in the country and for how long .
They are checking to see if you’ll misrepresent your situation
Unfortunately a lot of people get confused and think living outside Canada for a few years is temporary
