There will be a big question surely... The experience is countable when it is related field of education. Still you can try highlighting your MBA and not showing your IT responsibilities along with Insurance Adjustor. That may create confusion and result rejection. You should show your appointment and experience as Insurance claim and Adjustor. As you are doing that job in reality, so in case of verification, they will find it true. While preparing your exp certificate, you should be a bit tricky. I helped one of my friend to do similar thing who crossed the hurdles successfully. Hope you all the best.

According to CIC guideline, it wont be a problem unless you are a doctor/dentist/nurse/physiotherapist...etc.
you can apply if you have atleast 1 year work exp under your NOC
