So as the title says, is there any point before landing where adding a spouse is considered too late by CIC? Such as few days before the expiry of medical results? What happens if I did that? Will CIC ask me to redo medical or they will tell me it's too late?

No, there is no point that is too late before the actual landing. IRCC would either extend the medical or request another one.
