my wife wants to go to english school when she comes to canada
we don't know about occupation yet so could she fill out english school?
 
Going to English school is not an occupation, so you can't use that.
 
The occupation is not really an important part of the application. They will not be surprised if she does not end up working as what she lists here. You could put her current occupation, unless it is highly unlikely she could do that in Canada. Or put some occupation that she hopes to get. 'Student' will not cause the application to be rejected, either, though I would pick some real job instead.
 
You can always just put "Homemaker".
