So this is several years ago now, but my husband got RQ for missing a single same day trip in his application. When he got RQ, they didn't ask for any evidence of his time outside of Canada. What they wanted was evidence to prove he was in Canada on the days he was claiming he was in Canada.
Was your application actually returned? It sounds like it wasn't returned. You were instead asked to submit additional documents. Is that right? If so, the residency dates are locked in on the date you submitted your original application.
You need to strengthen his evidence of ties to his home country. Also consider shortening his trip. Placing focus on your relationship and anniversary will just make the officer more concerned he has plans on remaining long term.
